One of my favorite food blogs to read is Picky Palate. That's where this quick lunch idea came from.
The snow is coming down really hard outside. So we enjoyed a tuna salad sandwich, side of spinach salad, and potato chips from the comfort of our warm kitchen. Maybe later we will wrap up and venture outside to play in all this snow!
Classic Tuna Fish with Baby Spinach on Whole Wheat Rolls
2 small cans tuna, drained
½ c. mayonnaise or miracle whip
1 T. mustard, regular or spicy brown
1 T. sweet relish
1 T. lemon juice
Pinch of salt
Pinch of fresh ground pepper
Soft whole wheat rolls
Fresh baby spinach leaves
Place all ingredients into a bowl and mix until combined. Place on a whole wheat rolls topped with fresh baby spinach leaves. Enjoy!
