Biscuits & Gravy Casserole

Look what I pulled out of the oven this morning! It was delicious and perfect for our Sunday morning brunch. It made the house smell wonderful and even the kids were excited for this to be done baking so they could try it!  I'm a huge fan of breakfast casseroles and this will for sure be made again soon...maybe even for Christmas morning! 


Biscuits & Gravy Casserole

1 lb. sausage
1.5 oz. peppered sausage gravy mix
1 c. shredded cheddar cheese
6 eggs
1/2 c. milk
Salt & pepper to taste
1 can (8 oz.) biscuits
Preheat oven to 350 degrees. Grease a 9×13 pan. Then cut the biscuits into 1″ pieces and line bottom of pan.  Brown the sausage and scatter over biscuits. Sprinkle with cheese.  Whisk eggs and milk with a pinch of salt and pepper and pour it over the pan. Make gravy mix per package directions and pour over. Bake in the oven for about 30-45 minutes.

Mini Fruit Pizzas

What a crazy busy week this has been! Most importantly it is the first week of school here in Michigan.  My first grader has LOVED every minute of it so far! He quickly found his way around his new school and has made several new friends already.  To make the first week of school special, I wanted to make a new after-school treat for C. With the help of Immaculate Baking, it was super simple and didn't take much time at all!

I got the inspiration for this after-school snack from my previous recipe called Fruit Pizza.  Same idea, only this time in smaller, individual sized portions.

MINI FRUIT PIZZAS

1 pkg. Immaculate Baking Vanilla Sugar Cookie Dough (24 Cookies), baked according to directions on package


Mix Together: 4 oz. cream cheese and 1/2 c. powdered sugar


Spread cream cheese mixture onto cookies.


Dice up raspberries, strawberries, grapes, and blueberries (or fruit of your choice) and decorate cookies as desired.
