Grape {Dessert} Salad

We got back last night from visiting my family in Indiana.  Just in time before the big snow hit!  It's been snowing...and snowing...and SNOWING today! School is already canceled for tomorrow and the kids and I had a blast sledding today in all this fresh white snow before the temperature drops tonight/tomorrow.

We had a great time in Indiana and got to celebrate Christmas with my side of the family.  The kids loved the extra time with their grandma, grandpa, and cousins!  For our family get-together I wanted to try this grape salad recipe that my uncle emailed me a few weeks back.  It was a huge hit and super delicious.  It's super sweet so it's more like a dessert than a salad.  The crunchiness of the pecans and toffee were the perfect combination with the grapes.  I halved the recipe when I made it and there were no leftovers by the time we were all done. Thanks for sharing the recipe, Tim! It was a big hit!

Grilled Corn, Avocado and Tomato Salad with Honey Lime Dressing

Nothing makes me more happy than finding recipes with all my favorite things in it.  Avocados, Cherry Tomatoes, and Sweet Corn....YUM!!!!  Summer means sweet corn for me and there are still a couple farms around here that are selling those delicious bi-colored ears.  I served this salad with BLT sandwiches and ears of sweet corn rubbed with butter and sprinkled with salt.  A perfect summer-time meal!

Grilled Corn, Avocado and Tomato Salad with Honey Lime Dressing
Source: For The Love Of Cooking
1 pint grape tomatoes
1 ripe avocado
2 ears of fresh sweet corn
2 T. fresh cilantro, chopped
Remove husks from corn and grill over medium heat for 10 minutes. The corn should have some brown spots and be tender and not mushy. Cut the corn off the cob then scrape the cob with the back of your knife to get the juices. Set aside and let cool. Slice the tomatoes in half. Dice the avocado and chop the cilantro.

Honey Lime Dressing:
Juice of 1 lime
3 T. vegetable oil
1 T. honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash of cayenne pepper

Add all the dressing ingredients in a small bowl and whisk to combine. Set aside.

Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit for 10-15 minutes to let flavors mingle. Enjoy.

Caprese Salad

Caprese salad is a favorite of mine! When we got a pile of tomatoes and a big bunch of basil in our farm share box, I immediately thought of this salad!  I live really close to Zingerman's Creamery which just so happens to make fresh mozzarella cheese daily!  It doesn't get any more fresh than that! Freshly picked tomatoes and basil plus fresh mozzarella = one amazing caprese salad. I've made this several times this summer!

Caprese Salad
Wash and tear basil leaves and toss with fresh chopped tomatoes and chunks of mozzarella
cheese. Drizzle with balsamic vinegar and olive oil. Season with salt and pepper. Toss to combine.

Chicken Caesar Salad

We received the biggest most beautiful head of romaine lettuce in our farm share box last week! I couldn't wait to make something with it!  What better than a Caesar salad?!?!

Often times, when we visit our friends in Chicago, they will make us the most amazing Caesar salad so I called them up to get the recipe!  Some of you may be grossed out by the fact that it has a raw egg in it, but if you can overcome that, you will just love it! I could eat this salad every day! We also grilled some chicken breasts to slice up and put on top of the salad. It was a meal in itself and oh so good!

Chicken Caesar Salad
Source: J. Barnett

3 or more cloves garlic, minced
1/4 c. olive oil

1 whole egg (or you can use Egg Beaters)
1/8 t. salt
fresh ground pepper
1/3 c. fresh lemon juice
3 squirts of Worcestershire sauce
2/3 c. freshly grated parmesan cheese

In a small bowl, mix together olive oil and minced garlic. Let garlic soak in the olive oil while you prepare remaining ingredients.

In a separate bowl, beat 1 egg. Add salt, pepper, lemon juice, Worcestershire sauce, and parmesan cheese. Whisk together until well combined.

Wash and dry romaine lettuce. Chop or tear into large, bite size pieces. Toss romaine with the oil/garlic mixture; then pour on the egg/cheese mixture and toss until well combined.  Optional: Add grilled chicken on top!

Avocado Egg Salad

I love avocados so it's no surprise that I loved these sandwiches! Avocado egg salad sandwiches - what a great idea! It even comes from the Skinny Taste blog which has healthier recipes on it. Just toast a couple slices of bread, spoon on some avocado egg salad and enjoy a scrumptious lunch!

I hope everyone has been enjoying the summer-like weather we've been having lately! The kids and I have been enjoying lots of picnics out under our big shade tree for lunch. It's great to get some fresh air while we grab a bite to eat. Have a wonderful week!

Caramel Apple Salad

Fall is officially here. My preschooler automatically associated the beginning of Fall with apple picking and so off to Wasem Fruit Farm we went! We love picking our own apples at the apple orchard. They had Gala, McIntosh, and Prime Gold ready to pick so we picked some of each. Note to self: Don't forget the bug spray next time! The mosquitos were literally swarming around us in herds!

My sister introduced me to this recipe this summer. I love it! It can be served as a side dish or as a dessert. Anyone can make it...the only direction is "Mix together and refrigerate". Doesn't get any easier than that! Enjoy!

Raspberry Vinaigrette

Here's the Raspberry Vinaigrette recipe I served with the Asiago Crisped Spinach and Raspberry Salad. I used some raspberries that we picked up from the farmer's market and it was so fresh and sweet tasting. Went great with the spinach and cheese crisps!

Raspberry Vinaigrette
Source: allrecipes.com

1 1/3 c. fresh raspberries or thawed frozen unsweetened raspberries
1/3 c. chicken broth
2 T. sugar
1 T. cider vinegar
2 1/2 t. olive or canola oil
2 t. Dijon mustard
mixed salad greens or spinach

Press raspberries through a sieve, reserving juice; discard seeds. In a jar with a tight-fitting lid, combine the broth, sugar, vinegar, oil, mustard and reserved juice. Refrigerate. Shake before serving over salad greens.

Kathie's Note: I made this dressing by throwing everything into my blender and then straining out the seeds at the end. (It's amazing how many little seeds are in raspberries!)

Asiago Crisped Spinach and Raspberry Salad

Look how fancy these little salads are! I just love these! They are pretty simple to make and they will turn your dinner into pure elegance! Besides...a "bowl" made out of cheese. What could be better?

Try this recipe the next time you want to impress your house guests. I know my in-laws were in awe when they saw and ate them! :)

Tomorrow I will post the raspberry vinaigrette recipe that I served with this salad.

Big Steak Salad

I was in the mood for a big 'ole salad last night but I knew there was only one way my husband would eat a salad for dinner and not be disappointed - if there was a big juicy steak on top! He's never been a fan of vegetarian meals and insists that all meals must have some sort of meat in them. :)

This salad was amazing!!! Something you would order at a fancy restaurant. I followed The Pioneer Woman's recipe step by step except for when it came to the candied pecan bits. I tried that step twice and failed both times! The first time my thermometer never got past 250 degrees so I kept cooking and stirring the sugar until it became as hard as a rock (literally)!!! Not sure if my thermometer is broken or what so the second time I just cooked it using the time estimate that PW gives. Strike 2! First of all it never turned dark and clear amber in color (I wonder if she used brown sugar) and when I poured the mixture on top of the pecans it was just a huge clump of sugar on top. It was pretty disgusting so I threw that attempt out and served our salad with plain pecans. Oh well! It was still delicious! The onion straws and juicy steak put this salad over the edge and I would definitely rate it 10 out of 10 with or without the candied pecans.

2 whole Rib-eye Or Strip Steaks, Extra Fat Trimmed
_____
FOR THE DRESSING/MARINADE:
¾ c. Canola Oil
3 T. Red Wine Vinegar
1 T. Balsamic Vinegar
1 T. Worcestershire Sauce
2 T. Soy Sauce
1 t. (additional) Soy Sauce
2 T. Lime Juice
2 T. Sugar
3 cloves Garlic, Peeled
1 T. Minced Fresh Ginger
½ t. Hot Chili Oil
1 t. Kosher Salt
Lots Of Freshly Ground Black Pepper
_____
FOR THE ONION STRINGS:
2 whole Onions, Sliced As Thin As Possible
2 c. Buttermilk
2 c. Flour
1 T. Salt
½ t. Cayenne Pepper
1 quart Canola Oil
Black Pepper To Taste
_____
FOR THE CANDIED PECAN BITS:
½ c. Pecans, Chopped
1 c. Sugar
2 T. Water
_____
FOR THE SALAD:
Lettuce Mix: Romaine, Arugula, Watercress, Raddiccio, Etc.
Small Grape Tomatoes
¾ c. Crumbled Blue Cheese

To make the dressing/marinade, combine all ingredients in a mason jar with the lid. Shake vigorously to combine; taste and adjust seasonings to taste.

Place steak in a plastic zipper bag. Pour in half the marinade and seal. Refrigerate and marinate for at least two hours.

Prepare the onion strings: Slice onion very thin. Place in a baking dish and cover with buttermilk and soak for at least an hour.

Make the candied pecans: Spread pecans on a baking mat or sheet of waxed paper. Add sugar and water to a small saucepan or skillet over medium heat. Cook to 280 degrees, or until dark and clear amber in color, about 5 to 6 minutes. Pour mixture over pecans (may not need all of mixture) and quickly stir/poke with a fork to evenly distribute mixture all over pecans. Allow to cool completely.

Make the onion strings: Combine dry ingredients and set aside. Heat oil to 375 degrees. Grab a handful of onions, throw into the flour mixture, tap to shake off excess, and PLUNGE into hot oil. Fry for a few minutes and remove to a paper towel-lined plate as soon as they are golden brown. Repeat until onions are gone.

Grill (or sautee) the steak over medium-high heat until medium rare, about 2 minutes on each side. Remove from heat and allow to rest. Slice steak against the grain in thin slices.

In a large bowl, add lettuce mix, blue cheese, and cherry tomatoes. Add a little dressing and toss to combine. Add more if needed. Add candied pecans at the end and toss to combine.

Heap salad on a plate, making sure to get plenty of blue cheese, tomatoes, and pecans on each plate. Add half a steak to the top of each plate, then top the steak with onion strings.

Serve immediately.

Sunshine Salad

I made this for dessert the other day. Very easy to throw together and my 3 year old loved it. I on the otherhand thought the lemon pudding was a little over-powering. Might have been better if I would have made the pudding with milk instead of the fruit juices, not sure. Give it a try, just because I don't give it two thumbs up doesn't mean you won't.

Sunshine Salad
Source: Taste of Home

1 can (20 oz) pineapple tidbits
1 can (11 oz) mandarin oranges
1 pkg (3.4 oz) instant lemon pudding
1 c. fresh strawberries, quartered
1 c. sliced bananas, sliced

Drain pineapple and oranges, reserving liquid. In a large bowl, combine pudding mix with reserved fruit juices. Fold in pineapple, oranges and strawberries; chill for at least 2 hours. Add bananas just before serving.

Fresh Spinach Salad

This is one of my favorite spinach salads. The dressing on it just makes it so delicious. Oh, and the fried bacon bits on top, they are like icing on the cake. This is a great recipe to make all spring and summer especially if you plan to have spinach in your garden this year!

Toss together in large serving bowl.

Dressing:
1/2 c. sugar
3 T. ketchup
1/2 c. oil
2 T. vinegar
1 T. Worcestershire sauce

Combine ingredients and mix well in blender. Pour over spinach mixture.

The Sunshine Salad

Also know as...The Wedgie Salad Bar

This was a big hit at a BBQ we had this past weekend. I got the idea from Robin Sue at www.BigRedKitchen.com but put a new twist on it. With two wonderful helpers by my side, Trinity and Julia, we arranged the salad to look like the sun and gave it a new name - The Sunshine Salad! We drizzled the wedges with 3 different salad dressings and arranged all the toppings around the platter so that people could decorate their own salad to their liking. Both the adults and the kids had fun with this one!

The Sunshine Salad

1-2 heads iceberg lettuce, cored and cut into wedges (Use a plastic knife so the lettuce does not brown)
Dressings of your choice
1 pound crispy crumbled bacon
1 cucumber, chopped
6 hard boiled eggs, chopped (optional)
1-2 c. shredded cheese
2-3 tomatoes, chopped

Place lettuce wedges on a round platter and arrange wedges to look like the rays of the sun. Drizzle with your favorite salad dressing(s). Place a small bowl of shredded cheese in the center. Place all other ingredients in small bowls around the platter. Let your guests pick their own wedgies and toppings.

Easy Fruit Salad

I often times struggled to find a good recipe for fruit salads. Never knew what to use for the glaze. Until now - the secret is all in a can of Peach Pie Filling! So delicious, yet so simple.
