Strawberry Bread

While surfing the web to find more strawberry recipes to make, I stumbled across this bread recipe. It sounded good so I tried it! It turned out so yummy! My parents were in town visiting so I was able to serve it for breakfast one morning. Everyone loved it! It makes 2 loaves so we ate one and I put the other in the freezer to enjoy later.

2 c. fresh strawberries
3 1/8 c. flour
2 c. sugar
1 T. cinnamon
1 t. salt
1 t. baking soda
1 1/4 c. vegetable oil
4 eggs, beaten
1 1/4 c. chopped pecans (optional)

Preheat oven to 350 degrees F. Butter and flour two 9 x 5 inch loaf pans. Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.

Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.

Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.
