Cherries on a Cloud

Cherries are in season so I made this for dessert the other night. While stirring up some of the ingredients, my preschooler walks into the kitchen and asks me what I'm making. I said, "Cherries on a Cloud." The kitchen is instantly filled with little giggles and he looks at me a bit confused and says, "Mommy, how are you going to jump so high to get a cloud in the sky?" Ha! You have to love the mind of a 4 year old! :)

This recipe turned out great and my little guy gave it 2 thumbs up!





Cherries on a Cloud

8 oz. cream cheese
1/2 c. powdered sugar
1/4 c. milk
2 c. Cool Whip, thawed

1 1/2 c. fresh cherry halves
3 T. cherry preserves

Pit fresh cherries and cut in half or quarters. Put cherry preserves in a small bowl and microwave until warm (about 20 seconds). Pour cherry preserves over fresh cherries and mix together, then set aside.

Beat cream cheese in the bowl of an electric mixer, or with a hand held mixer, until smooth. Add powdered sugar and milk and continue mixing until fully incorporated and smooth. Fold Cool Whip into the cream cheese mixture and stir gently until fully combined. Spoon into dessert dishes. Use a spoon to make a well in the center of the cream cheese filling and fill with cherry topping.

Chill prepared dessert in the refrigerator until ready to serve. This dessert may be prepared up to a couple hours in advance.

Makes 8 mini servings or 4-6 medium sized servings.
