Cookies and Cream Cheesecakes

What did I make for the Super Bowl party tonight? Mini Oreo Cheesecakes. I saw this recipe on www.lickthebowlgood.com and my mouth was instantly drooling. I love popping Oreos in my mouth and I love eating a good piece of cheesecake even more! Putting these 2 ingredients together - I knew this was gonna be good!



How cute are these? And a great idea for a large group of people.





Cookies and Cream Cheesecakes

• 42 Oreos, 30 left whole and 12 coarsely chopped
• 4 8oz. pkg cream cheese, softened
• 1 c. granulated sugar
• 1 t. vanilla extract
• 4 large eggs, lightly beaten
• 1 c. sour cream
• pinch of salt

Preheat oven to 275°. Line standard muffin pans with liners. Place 1 whole Oreo cookie in the bottom of each liner.

Beat cream cheese at medium speed using an electric mixer. Gradually add sugar, beating until combined. Beat in vanilla. Drizzle in eggs, a bit at a time. Beat in sour cream and salt. Stir in chopped cookies.

Divide batter among pans. Fill them up almost to the very top. They may puff in the oven but they don't rise. Bake for about 22 minutes or until filling is set.

Cool completely on wire racks. Refrigerate 4 hours or overnight. Remove from pans just before serving.

Makes 30 cheesecakes.



I can't even begin to tell you how good these are!!! You'll just have to try one for yourself! :)
