Buffalo Chicken Nachos

Here's a great appetizer idea for any occasion. We are huge fans of buffalo wings in this house so as soon I saw this recipe I knew my family would love it. I will definitely be making this again the next time we have some friends or family over. Buffalo sauce, blue cheese, celery....need I say more? Enjoy!



Buffalo Chicken Nachos

8 c. Ranch flavored tortilla chips (I used Cool Ranch Doritos)
4 c. cooked chicken shredded
1 1/2 c. Buffalo Wing sauce
1/2 c. water
3 c. shredded cheddar cheese
4 oz. blue cheese crumbles
1 c. chopped celery

Preheat oven to 475 degrees. Spread tortilla chips on a rimmed baking sheet or in a shallow dish.

Bring wing sauce and 1/2 cup water to a simmer. Add shredded cooked chicken; heat through. Strain the chicken (reserving the sauce) and spread over ranch-flavored tortilla chips. Top with shredded cheddar.

Bake in the upper third portion of the oven until cheese is melted for about 5-7 minutes. After nachos are baked top with blue cheese, chopped celery and the reserved wing sauce.

  1. I make these as Quesadillas. Everything but the celery between 2 tortillas & then grilled on a George Foreman. Yummy!
