Rainbow Cupcakes

Here's a fun baking activity to do with younger kids. They will love helping to mix the food coloring in for all the different layers.

I love how bright and cheery these cupcakes are! What kid wouldn't want one of these for an afternoon snack or for their birthday party?

White cake mix
Food coloring (red, blue, green, and yellow)
White baking cups
Whipped cream or white frosting

Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color. Follow directions on back of food coloring box to get orange and purple shades.

Line 16 muffin pan wells with white baking cups. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.

Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream or white frosting cloud.

  1. Did this for Davyn's Carnival Birthday. It's hard work to dirty all the dishes but the end result is more than worth it!
