Mini Taco Bowls

These little things turned out great! They look so fancy all dressed up on your plate but they were super simple to make. These would be fun to make for Cinco de Mayo or for any Mexican themed dinner party!

Mini Taco Bowls

8 flour tortillas (6 inch)
1 lb. ground beef
1 pkg. taco seasoning
1/2 c. shredded cheddar cheese
2 c. chopped lettuce
1 tomato, chopped
1/4 c. sour cream

Heat oven to 350°F.

Microwave tortillas on high for 30 seconds. Line each of 8 muffin cups with 1 tortilla. Carefully fold back edges of tortillas, leaving opening in centers for filling.

Bake 10 minutes. Meanwhile, brown meat in large skillet; drain. Follow directions on back of taco seasoning package.

Spoon meat mixture into tortilla bowls; top with shredded cheese, lettuce, tomato, and sour cream.
