Wedding {Cookie} Favors

I'm back!!!! Were you starting to worry about me? Starting to wonder if I was going to come back? :) Sorry about the longer than planned "break" from blogging. We packed up our things and moved to a new house. While unpacking and getting settled in, the month of June seemed to come and go right before my eyes! Plus it's summertime (my favorite season of the year) so I've enjoyed doing lots of fun things with my family lately. The break from blogging was much needed but it's good to be back.

So let me show you a project that I had the honor of doing just two weeks ago.  Our friends Top and Stella got married and asked me to make their wedding {cookie} favors.  I was ecstatic to make their wedding favors and also excited to break in the new ovens in my kitchen. :)

These sugar cookies served as both their wedding cake and favors hence the reason they are in the shape of a wedding cake. Each box held six cookies in all.  Their initials were displayed on top.

They turned out just as I had hoped and the boxes wrapped with a white ribbon completed the look.  It was such a fun project to work on and I'm so glad the bride and groom liked them!

Congratulations Stella and Top. Thank you for letting me be a part of your very special day!

Fish Tacos

These fish tacos are AMAZING!!! I was first introduced to fish tacos about 3 years ago at The Taste of Ann Arbor and have been a huge fan since then.  This recipe for beer-battered fish on corn tortillas did not disappoint. We will be having these again very soon.  The only change I had to make to the recipe was to tone the sauce down a bit for my kiddos.  The 1 teaspoon of cayenne pepper proved to be a bit too spicy but you can adjust it to your own liking.

Fish Tacos
Source: Allrecipes.com

Ingredients:
1 c. flour
2 T. cornstarch
1 t. baking powder
1/2 t. salt
1 egg
1 c. beer
1/2 c. plain yogurt
1/2 c. mayo
1 jalapeño pepper, minced
1 t. minced capers
1/2 t. dried oregano
1/2 t. ground cumin
1/2 t. dried dill weed
1 t. ground cayenne pepper
1 quart oil for frying
1 lb. cod fillets, cut into 2 to 3 oz. portions
1 (12 oz.) pkg. corn tortillas
1/2 medium head cabbage, finely shredded

1. To make beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don't worry about a few lumps).

2. To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeño, capers, oregano, cumin, dill, and cayenne.

3. Heat oil in deep-fryer to 375 degrees F.

4. Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage and white sauce.

Owl Birthday Cake

My baby girl turned THREE last week and today was her big party.  We could not have asked for the weather to be any more perfect than it was today - sunny and absolutely beautiful!  Kadence has a love for owls lately.  Her big girl bedroom has an owl theme, some of her PJ's have owls and even her favorite pair of socks are those with owls on them!  So there was no question in my mind that she needed an owl cake for her birthday. This year I ventured out and used dark chocolate fondant!  Seeing her face when she saw her cake just melted my heart.  She is growing up so fast and I just love her to pieces!

My hubby and I had such a fun time decorating this cake. He helped by coloring all the fondant and cutting out the eyes, feet, branch, and leaves.  He did such a great job that I'll have to hire him for future work. ;P

I found a cute stamp at Michael's and made little individual bags for the potato chips. (Idea from Pinterest.)

Also served cheese and crackers in the shape of an owl! This adorable idea came from Beth over at Hungry Happenings.

Another idea from Pinterest was this lollipop flower pot. It took a JUMBO bag of Dum Dums to fill it up!

What a wonderful day spent with friends, food, and lots of sunshine!  Happy Birthday K!!!

At The Bakery...

We are gearing up for wedding season at the bakery. I've had several consultations already and getting excited about our busy season!  Our front window display needed something new, so I made this beauty. :) I love all the different shades of purple.

A 3-tiered Cupcake!

I've made several 3 tiered cakes before but this was a first for me. A mini cupcake...on top of a regular sized cupcake...on top of a muffin sized cupcake! How fun!!!

Spring is finally here and I am just LOVING this warmer weather. Hibernation is over and I got to spend lots of outdoor quality time with my family this weekend! Have a great week everyone!
