Pepperoni Pizza Puffs
I love these little pizza bites! They are so good and fun to dip in the pizza sauce. This would be a great appetizer to serve for a football game or birthday party. The leftovers were even good the next day. I will definitely be making these again soon!
Pepperoni Pizza Puffs

3/4 c. flour
3/4 t. baking powder
1 T. Italian seasoning (I used oregano)
pinch of salt (optional)
pinch of red pepper flakes (optional)
3/4 c. milk
1 egg, lightly beaten
1 c. shredded mozzarella cheese
1/4 c. grated Parmesan cheese
1 c. cubed pepperoni
1/2 c. store bought pizza sauce
Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using); whisk in the milk and egg. Stir in the mozzarella, Parmesan, and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
