Apple Nachos

With lots of apples left from our trip to the apple orchard several weeks ago, I needed another apple idea. This cute idea for Apple Nachos comes from Taste of Home. Instead of slicing apples in wedges, cut them in circles to resemble nachos!

We learned how to make a really good caramel sauce in my Baking and Pastries class so I used that to drizzle on top then sprinkled them with mini chocolate chips and chopped pecans.

Caramel Recipe from On Baking: A Textbook of Baking and Pastry Fundamentals

Caramel Sauce

4 lb. 8 oz. Sugar
1 pt. Water
2 fl. oz. Lemon Juice
2 qts Heavy Cream, room temperature
5 oz. Unsalted Butter, cut into pieces

1. Combine the sugar and water in a large heavy saucepan. Stir to moisten the sugar completely. Place the saucepan on the stovetop over high heat and bring to a boil.

2. When the sugar comes to a boil, add the lemon juice. Do not stir the sugar, as this may cause lumping. Continue boiling until the sugar caramelizes, turning a dark golden brown and producing a rich aroma.

3. Remove the saucepan from heat. Gradually add the cream. Be extremely careful, as the hot caramel may splatter. Whisk in the cream to blend.

4. Add the pieces of butter. Stir until the butter melts completely.

5. Strain the sauce and cool completely at room temperature. The sauce may be stored several weeks under refrigeration. Stir before using.

* This makes a ton of caramel sauce so I quartered the recipe.
