Candy Corn Sugar Cookies
Here's another fun Halloween recipe for you! It's amazing that I don't weigh 400 pounds after all the Halloween goodies I've made this week. Luckily I am good about sending them off with my husband to take to work. The less I keep in the house - the less I can eat! :)
I do not like the taste of real candy corn but I find myself buying a package of them every year to use for decorating something with. These candy corn sugar cookies on the other hand are very good and have a hint of lemon to them! They were a blast to make and would be a wonderful treat to make if you are hosting a Halloween party this year.
Candy Corn Sugar Cookies

2 Sticks Butter, softened
1 c. Sugar
1 Egg
2 T. Lemon Juice
2 t. Lemon Zest
1/8 t. Salt
3 c. Flour
1/2 t. Baking Soda
Red Food Dye
Yellow Food Dye
1/2 c. Granulated Sugar (for dusting)
Combine butter and sugar in a large bowl; beat at medium speed until creamy. Add egg, lemon juice, lemon zest, and salt. Continue beating until well mixed. Add flour and baking soda, beat until well mixed. Divide dough into thirds. Press one-third of the white dough evenly into the bottom of a loaf pan that you have lined with foil, wax, or parchment paper. Place another one-third of the dough into a bowl and add yellow and red food dye to make orange (refer to the chart on the back of your box). Once it is mixed evenly, press orange dough evenly over white dough. In another bowl, add the final amount of dough and dye yellow. Press that evenly over the orange dough. Cover and refrigerate until firm (2 hours or overnight is best). Once chilled, invert your loaf pan and unwrap your dough. Flip it back over and place it on a cutting board. Cut loaf crosswise into 1/4-inch slices using a sharp knife, trimming edges to make even, if necessary. Cut each slice into 6 wedges.
Place 1-inch apart onto a lightly greased cookie sheet. Bake for 7-10 minutes in a pre-heated 375 degree oven. Place cookies straight into a bowl with sugar and coat. Place coated cookies on a baking rack to cool.

ReplyDeleteOh my goodness, these cookies are TOO cute. I am actually not a big fan of candy corn itself but I've always thought it was so cute and emblematic of Halloween as a holiday - these will be the perfect compromise!! :)

Any brand of butter is fine. I used all-purpose flour.

ReplyDeleteOff the wall question-could you buy sugar cookie dough in a tube at the store, then add the food coloring and continue from there? I know, I know, sacrilegious, but I have to bring something for my son's party TOMORROW, and these are so cute.
ReplyDeleteKathryn, I've never tried it but someone else told me they tried and it didn't work out so well. It really doesn't take that long to make them from scratch. You could try putting them in the freezer to firm them up faster before cutting them. I'm sure the kids in your son's class would love them!!! You can do it! :)

I used two rolls of sugar cookie dough, let them soften a little bit, put them in my mixer with about 1/4 cup of flour (because they were very sticky!), mixed, then separated into three colors. I can't wait to try your recipe, though, I'm sure it's MUCH better tasting than store-bought cookie dough :P In a pinch, though, this worked well. Thank you so much for the inspiration! I wish I knew how to upload a picture....!

ReplyDeleteJust made these and sadly, the dough didn't layer evenly and the cookies flattened into funny looking round cookies, not triangular corn shapes. They taste ok, though!
ReplyDeleteI made these yesterday! It didn't say in the instructions, so I used 1-lb (small) loaf pans and divided each color in half. That made the layers in good proportion to each other. The dough firmed up nicely after just a short time in the freezer. I was surprised at first how small they were, but now I see in the photos above they aren't large cookies (although thicker than rolled cookies). Great with coffee this morning!

DeleteYum, yum, yum! I made these with the following changes:
ReplyDelete1. Used 1 stick butter and 1 stick margarine
2. I don't like lemon, so I exchanged it for 1/2 tsp vanilla and 1/2 tsp almond extract. I might try adding a little more next time. I sometimes do get a little bit of a flour taste.
3. I tried baking at 375 for 7 minutes, but my cookies almost burned. So I tried 8 minutes at 350 and it was perfection!
Size: 1.5 x 1.5 inch cookies
Made: 105 cookies + 8 cookies that I made with the leftover ends
I made these and they are cute and tasty but not worth the work. It is very time consuming to make the dough, divide it, incorporate the colors, layer it really tight and good, wait for them in the fridge, then cut them out individually and bake them. way too much work. You have to ask yourself is it worth your time because time is money or it worth to go to the store and buy something cheap and good?

The hardest part was getting the food colouring to mix into the dough, and that is because I used my liquid stuff instead of buying some gel. I used vanilla instead of the lemon, and dipped in sugar before baking, and even with these adjustments they are really good. Thanks so much for posting!
ReplyDeleteThese are in the fridge right now. The batter was yummy so I'm sure the cookies will be too. :) I'm not sure why it was posted that they are "A lot of work". They took me under a half hour from start to in the pan. I did have orange food coloring (in gel) so I didn't have to mix the red/yellow - that might help? The only thing I had to think about was splitting the dough in thirds - I am so bad at that! ha! I have just usual baking skills and found them easy so don't be afraid. :)

ReplyDeleteBut when I made them, the dough was really really dry... I ended up having to add a few more ingredients so it was actually dough... Cutting them up was easier than I expected! :)
But as you bake them, the color goes out and they dont look that great (they taste okay). Im assuming thats why she didnt put up a picture of the post-baking results. Maybe I did something wrong? idk.. But i love the idea! If only the color didnt fade....
I made these without the lemon and I think this dough may be my new sugar cookies recipe! They are so delicious. I didn't have a loaf pan to use so I used a 13x9 pan and I ended up with mini candy corn cookies, still super cute!

DeleteTried these out, without lemon juice and zest because I didn't have it, added some vanilla extra and tiny bit extra sugar (but I didn't cover them in sugar after they were baked). Very nice recipe, just watch them carefully, they don't look done when they're done and overbake quickly. 10 minutes was too long for me, 8.5 was perfect.
ReplyDeleteI used my kitchen scale to split the dough evenly into thirds. I partially mixed the food coloring in with a fork and then used my hands to make the coloring even - the warmth from my hands melted the butter enough to make the dough not dry. I think you need to make sure the dough is brightly colored with the food coloring before you bake - mine turned out great and the the colors were fine. Love this recipe!

These are too cute! I doubled the recipe for a ship-wide family event (we're Navy), and it made piles of cookies. Super easy recipe, so the only time constraint was having only one oven :)
