Pasta, Pasta!
That's what we had for dinner tonight! Along with these adorable little meatball bubble biscuits. I just love these. If you didn't know any better, you'd think you were just biting into some cute little rolls, but then surprise....there are meatballs and cheese inside! They are the perfect little dippers for marinara sauce and go great with a side of spaghetti.
Meatball Bubble Biscuits

1 can Pillsbury golden layers biscuits - each pulled into 2 layers
10 frozen fully cooked italian style meatballs - thawed and cut in half
2 sticks string cheese - cut each into 10 pieces
1 T. parm cheese
1/2 t. Italian seasoning
1/4 t. garlic powder
1 c. marinara sauce
Heat oven to 375. Separate biscuits into 2 layers. Place 1 meatball half and one piece of cheese into each biscuit, wrap dough around it and seal edges. Place seam side down into 9 inch round cake pan. Sprinkle with parm cheese, garlic pwd. and italian seasoning. Bake 18-20 min or until golden brown. Serve warm with warm sauce.

ReplyDeleteSheel- I personally would not recommend it if using canned biscuits. In my experience they don't seem to rise well after being frozen. Makes no sense since you can buy frozen biscuits and they rise just fine...

ReplyDeleteThis looks so yummy! But is there any way to cut the recipe in half? Also, what if you used a whole meatball in each biscuit? Do you think that would work?
ReplyDeleteYou could definitely cut the recipe in half but it calls for 1 can of Pillsbury golden layers biscuits. I'd hate for the other half of the can to be wasted. You can use a whole meatball but you will probably have to use a whole biscuit (instead of dividing it into 2 layers ) otherwise you won't have enough dough to completely cover the entire meatball and the cheese. This will also affect the baking time.
ReplyDeleteyou could roll the biscuit out a little to make it thinner and bigger to fit the entire meatball...
DeleteJust curious - did you use the mini-meatballs or the full-sized meatballs? Mine are in the oven and I used the full-sized, cut in half, but used the full biscuit around each HALF of meatball. Rest of meatballs went in sauce for those that won't like the biscuit ones.

ReplyDeleteI found these little yummies on Pinterest. I made them for my little tot who is oh so picky. Made the meatballs with ground turkey and diced some veggies to go in the meatballs. They were so good even the tot ate them.

ReplyDeleteMade these last night with some pasta..not a fan of string cheese so I just added a pinch of shredded mozzarella under my meatball half and it turned out just fine. I also subsituted garlic salt and instead brushed on the jared minced garlic....Husband took the leftovers to work and requested them again for Friday! Thanks for the recipe!
ReplyDeleteAnd to the above poster who was curious about using crescent rolls..I think that sounds YUMMY! Just put your meatball half and cheese in the large end and roll up like a normal crescent and bake...I actually might try this variation next!

ReplyDeletei use frozen bread dough....thaw it out then rolled out i also use loose hamburger ...we have added cheese 1/2 slice ...i have mixed cream of mushroom with the hamburger then put about tablespoon on the rolled out dough pinch clossed then bake them my hole family likes these an you dont need to raise the dough

ReplyDeleteGreat question! You would definitely want to cook your homemade meatballs first. The frozen ones that are used in the recipe are pre-cooked; you are essentially just warming them up while the dough bakes.
ReplyDeleteMade these for supper tonight...delicious!! Although I mistakenly opened a can of jumbo buttermilk biscuits, they still tasted great. I brushed the inside with onion powder, garlic powder, and italian seasoning mixed in melted butter. Also used shredded mozzarella because that's what was in the fridge. Served them with homemade alfredo sauce. Definitely a new staple in our house!

ReplyDeleteI loved this recipe!! there wasn't enough cheese for me when i made it with the cheese stick though, so i tried my 2nd batch with a medium cheddar cheese. it was super yummy!!! i made them with the whole meatballs and whole biscuit too. thank you for this recipe! im excited to try new things with this, like some vegitarian options.. Onions and cheddar one/ zucchini and mozzerella/ and maybe add an eggplant :)

ReplyDeleteThese are in the oven right now and I can't wait to eat them. I accidently bought the Grands biscuits so I just split them in half and used a whole meatball. Hopefully my 4 year old will live these. I have a feeling they are going to become a family favorite.

ReplyDeleteMade these for my bf and mom. Changed it a little as the bf wanted something bigger. So I used a whole biscuit and 2 meatballs with shredded mozzerella (we dont keep string cheese around). They were delicious :D

ReplyDeleteThis is a lot like my "CHEATERS" recipe, for when I'm in a hurry or to lazy to make full-sized pepperoni rolls. I wrap a couple of slices of pepperoni and cheese with the biscuits and brush with melted butter and sprinkle garlic powder/salt on them. my girls like to dip theirs but my hubby likes his with a little bit of sauce inside, so I make both.
