Meatball Bubble Biscuits

Pasta, Pasta!

That's what we had for dinner tonight! Along with these adorable little meatball bubble biscuits. I just love these. If you didn't know any better, you'd think you were just biting into some cute little rolls, but then surprise....there are meatballs and cheese inside! They are the perfect little dippers for marinara sauce and go great with a side of spaghetti.

  1. these sound delicious and Im going to make them, could they be frozen before cooking? ready for a party?

  2. Sheel- I personally would not recommend it if using canned biscuits. In my experience they don't seem to rise well after being frozen. Makes no sense since you can buy frozen biscuits and they rise just fine...

I am eager to try these... probably tonight, alas no canned biscuits or string cheese. Bring on the Cheddar Garlic Bisquick mix that's been hanging around my pantry for the last two weeks looking lonely ;-D

  9. I want to see a picture of the inside of one of them! Yummy!

  10. This looks so yummy! But is there any way to cut the recipe in half? Also, what if you used a whole meatball in each biscuit? Do you think that would work?

    ReplyDelete
  11. You could definitely cut the recipe in half but it calls for 1 can of Pillsbury golden layers biscuits. I'd hate for the other half of the can to be wasted. You can use a whole meatball but you will probably have to use a whole biscuit (instead of dividing it into 2 layers ) otherwise you won't have enough dough to completely cover the entire meatball and the cheese. This will also affect the baking time.

    1. you could roll the biscuit out a little to make it thinner and bigger to fit the entire meatball...

  12. Just curious - did you use the mini-meatballs or the full-sized meatballs? Mine are in the oven and I used the full-sized, cut in half, but used the full biscuit around each HALF of meatball. Rest of meatballs went in sauce for those that won't like the biscuit ones.

  13. Hi Michelle. I used half of a full sized meatball with half of a biscuit.

  19. Instead of a cake pan would it be possible to use a muffin pan??

    ReplyDelete
  20. You could definitely use a muffin pan.

  21. These look delicious, and I can't wait to make them. Do you have the nutritional info for these by any chance?

  22. Just made these. They are great! Finally a recipe that turns out exactly like the picture. My family loves them!

  23. if you use a muffin pan are you using a reg sized muffin pan or a mini muffin pan? I have frozen cocktail sized meatballs, would tjhese be okay whole?

    ReplyDelete
  24. also are you using regular size biscuit ( 10 in pkg ) or grands biscuits?

  25. What a great recipe, we absolutely loved them. I used homemade meatballs though, I haven't found a store bought frozen meatball that I like.

  26. Made these last nite, turned out awesome thanks for the recipe! I followed the directions, the biscuits I used were called pillsbury jr golden layers, but it doesn't matter you can use any type of refrig biscuit dough.

  27. Kathie, after a long day I accidentally bought crescent rolls and not biscuits! FIGURES! Is there a way to modify the recipe accordingly? I'd hate to go back to the store for one thing.

  28. Made these tonight and posted them on my blog - with a mention of course. Yum! Thanks. I'm a new follower :)

  29. Made these last night with some pasta..not a fan of string cheese so I just added a pinch of shredded mozzarella under my meatball half and it turned out just fine. I also subsituted garlic salt and instead brushed on the jared minced garlic....Husband took the leftovers to work and requested them again for Friday! Thanks for the recipe!
And to the above poster who was curious about using crescent rolls..I think that sounds YUMMY! Just put your meatball half and cheese in the large end and roll up like a normal crescent and bake...I actually might try this variation next!

  33. Just made these today and they were amazing!! Might try them next time with just cheese and put meatballs in the sauce with spaghetti...

  34. Just a quick question. If I wanted to use my own meatball recipe for this instead of frozen ones. Would I cook them first? Or put them in the dough raw? Thanks!

    ReplyDelete
  35. Great question! You would definitely want to cook your homemade meatballs first. The frozen ones that are used in the recipe are pre-cooked; you are essentially just warming them up while the dough bakes.

  36. Made these for supper tonight...delicious!! Although I mistakenly opened a can of jumbo buttermilk biscuits, they still tasted great. I brushed the inside with onion powder, garlic powder, and italian seasoning mixed in melted butter. Also used shredded mozzarella because that's what was in the fridge. Served them with homemade alfredo sauce. Definitely a new staple in our house!

  37. Mmmmmm can't wait to try these. It shall be on the menu tonight. I think I want to use croissants instead of biscuits and make mine a little spicy with pepper jack cheese and a jalapeno slice. This will make great party finger food. Thanks for the recipe.

  38. Winner for sure. I was asked to add a slice of pepperoni for the full on pizza bite. The kids LOVED THEM. thanks Kathie and thanks pinterest

  40. I loved this recipe!! there wasn't enough cheese for me when i made it with the cheese stick though, so i tried my 2nd batch with a medium cheddar cheese. it was super yummy!!! i made them with the whole meatballs and whole biscuit too. thank you for this recipe! im excited to try new things with this, like some vegitarian options.. Onions and cheddar one/ zucchini and mozzerella/ and maybe add an eggplant :)

  46. A little too much effort for the outcome. Perhaps I'd be more of a fan with homemade dough - I've never used something froma can before.

    ReplyDelete
  47. These were really good! Pretty easy to make too.

  48. Made this for dinner tonight, my 6 yr old dtr, who requests meatball subs every week loved them. I will also be putting this in my appetizer file.

  52. would crescent rolls work?

  53. We had these tonight, even the 3 year olds were fans! They ate 4 each!

    ReplyDelete
  54. did you use the small can of biscuits (10) and not the bigger one (8) because i had a hard time wrapping half a meatball and a slice of the stick into half a biscuit in the 10 can.

    ReplyDelete
  55. I couldn't find frozen meatballs! AH! What size meatball should I make? And are you using the smaller can of biscuits or the grands? Thanks for the help! I'm dying to make these! I'm pregnant and want them NOW!!!!!!!!!!!!!

    ReplyDelete
  56. These are in the oven right now and I can't wait to eat them. I accidently bought the Grands biscuits so I just split them in half and used a whole meatball. Hopefully my 4 year old will live these. I have a feeling they are going to become a family favorite.

  57. I have leftover meatloaf from last night and I am going to cube it up and use that tonight! Also, I am going to use Rhoads yeast rolls to warp them, hope it turns out ok!! My son is very excited!!

    ReplyDelete
  58. All made and ready to go in the oven tonight. The only change i made was to dice up some mozz cheese and add it to my meatballs before i baked them. It makes for a nice moist and juicy meatball.

    ReplyDelete
  59. This sounds quick and delicious. I'm getting ready to make them now but am wondering how easily they'd reheat in the microwave. I'm needing to make something that I can cook now, stick in the fridge til morning, and then reheat after we travel 3 hours away to a family gathering.

  60. I cannot wait to make these!!! I am at the library and can't wait to make these tonite.

  61. Hi Kathie,

I'm in Australia and haven't been able to find any cans Pillsbury golden layers biscuits .. What other brands or products could be used.. Are they like a bread dough?

    ReplyDelete
  62. May I ask a question Kathie. Is the picture at the top of this post your own picture or someone else's? I just wondered bc ppl are giving this lady on FB greif bc she used it without referencing your post.

  63. Made these for my bf and mom. Changed it a little as the bf wanted something bigger. So I used a whole biscuit and 2 meatballs with shredded mozzerella (we dont keep string cheese around). They were delicious :D

  64. I made these....soo0o0 good!

  65. A friend brought these to a party recently and they didn't last long. They were delicious and easy to eat.

  66. This is a lot like my "CHEATERS" recipe, for when I'm in a hurry or to lazy to make full-sized pepperoni rolls. I wrap a couple of slices of pepperoni and cheese with the biscuits and brush with melted butter and sprinkle garlic powder/salt on them. my girls like to dip theirs but my hubby likes his with a little bit of sauce inside, so I make both.

I can't wait to try them with meatballs, The for sharing! Bren
